What a dazzling surprising and fresh combination of Brussels sprouts, cauliflower and Asian dressing. The vegetable is nice and crispy and the fried rice gives the extra tasty "bite" in this delicious vegetable meal. Delicious with a grilled fish or chicken, serve with rice, but also excellent with noodles!
1. Preheat the grill for 250º C. Clean the sprouts, wash them and do the same with the cauliflower. Divide the vegetables over different oven dishes and add oil, pepper and salt to taste. Put in the oven for about 15 minutes.
2. Meanwhile, heat about 2 cm of sunflower oil in a saucepan and let it heat up. Put the rice in, let it pop and remove the rice with a sieve. Drain on kitchen paper. Be careful not to burn yourself!
3. Make a dressing of garlic, fresh coriander, ginger syrup, oyster sauce, lime juice, rice oil, sweet chili sauce and salt and pepper to taste.
4. Put the vegetables in a bowl, sprinkle the fried rice over it and sprinkle the fresh Asian dressing over it. Garnish with fresh coriander if necessary.
